Tacos Aren't Just for Tuesday, They are for Every Day

America sure loves its tacos, and never more than on Tuesdays, when the handheld Mexican dish was often on special at bars and restaurants in the economic good times, along with scratch margaritas and frosty bottles of Corona beer.

And who could blame us? Tacos are relatively easy on the pocketbook and they are versatile when it comes to the filling. Almost anything can be stuffed into a corn or flour tortilla, and often it is what you have in the pantry or fridge. It makes them ideal for dinner for just about any type of diet and even the pickiest eater. 

“It’s the perfect category of food,” says Pati Jinich, cookbook author and host of the James Beard award-winning PBS show “Pati’s Table.” Not only can the fillings and garnishes be made ahead of time, making meal time a breeze, but also they can be tailored and customized to every eater at the table, whether you’re feeding two people or 10.
